Quinoa Cakes E

Are you trying to get more quinoa into your life? Is it hard to remember to keep it cooked and ready in your fridge? Maybe you need a protein rich, healthy-carb side dish to put with soup, or to grab and go in the car? These thick, chewy, tortilla-like pancakes solve all of those problems! Easy to make in the blender, just pour and bake! These are fantastic hot, and are also very good cold or at room temperature. Take some along for a great E snack!

Ingredients

1C dry quinoa (see note)

1C tap water

3/4t mineral salt

3/4t italian seasoning blend (or your own blend of your favorite green herbs, like rosemary, sage, thyme, etc)

1t. garlic powder

1t. onion powder

Preparation

Note on Quinoa - You need to rinse the quinoa very well (unless you bought the pre-rinsed kind). Pour into a sieve (not a colander) then rinse and rub between your fingers under running water for around 1-2 minutes. Then use in this recipe.

I haven't tried soaked quinoa yet, but it should work just fine. Maybe reduce water to 3/4C and see how the consistency is. It should be similar to pancake batter, adjust water amount if necessary.



Heat oven to 425. Line a baking sheet with COATED PARCHMENT. I used Reynolds Wrap Parchment paper roll. I tried both regular parchment paper and a silicone baking liner and BOTH STUCK. You might have luck spraying those with non-stick spray, but I didn't try that yet.


Add all ingredients to the blender/blender cup. Blend for a full minute, or until white in color and quite smooth.


You have 2 options for making this bread:


  • Drop 2T at a time into circles about 2" apart. I use my Pampered Chef Cookie Scoop, and the batter is thick enough to plop out nicely when I squeeze the handle. When the tray is full, firmly tap the whole cookie sheet on the counter and they will all magically spread out to about the same thickness. You'll have to run 2 trays to use all the batter.

  • OR - Spread all the batter across the parchment, tap firmly to even it out. You might need more time for a solid sheet like this.

  • OR - I have heard (but not tried) that you can spray a cake pan and pour 1/2 the batter in to bake, with no parchment.


For all configurations: bake for 15 minutes, flip the cakes over and bake for 10 more.


1/4 of the batch is equivalent to 1/2C cooked quinoa! If you used the 2T size, you will get between 4-5 cakes in a serving.



MEAL IDEAS:

  • 1 quinoa cake & 2 slices lean turkey, wrapped around a baby cucumber. Make 4 of these for a full lunch!

  • Spread with 1/4 Laughing Cow Cheese, cucumbers and bell peppers on the side

  • As a side with an E salad, that isn't too heavy on carbs already

  • As a side with an E soup that isn't too heavy on carbs already

  • As a side with a FP salad, to create an E meal

  • As a side with a FP soup, to create an E meal

  • Eat plain at room temperature as a snack on a busy day (not too often, since they only have a little protein and no veggies!) Drink a lot of water, as they will continue to expand and make you feel very full!
