Cauli-Hacked Quinoa Rice E

If your family doesn't like cauliflower rice, and really puts their foot down about eating quinoa, then this is the hack for you! NO ONE can tell a taste or texture difference when you mix them together. Give it a try, but don't ruin it and tell them what you've done!

Ingredients

  • 1C brown rice

  • 1C quinoa

  • 4C water

  • 16oz bag frozen riced cauliflower

Preparation

(updated method: last time I just put my dry quinoa and dry rice together in the pot, swished well/claw hand, let the quinoa settle then poured off the water. I did that like 3 times. No need to rinse the quinoa separately!)


  1. Rinse and drain your brown rice several times in your cooking pot, allowing any floating hulls to wash away. Then, with the water poured out, swirl the rice vigorously with a 'claw hand' for about 30 seconds to rough up the grains and make them release more starches, then rinse a few more times to get rid of the starch. (listen to Poddy #222 for more details on why/how, and learn that refrigerated rice is even kinder to your blood sugars!)

  2. Rinse your quinoa with cool running water in a fine-meshed strainer, rubbing between your fingers for a couple of minutes. Add to the rice. (you can also used soaked/rinsed quinoa, but you'll need less water)

  3. Add 4C water, cover, bring to a boil, and reduce heat to a simmer until the water is down below the surface of the rice, around 20 minutes. Turn off the heat, keep the lid on, and allow to steam for another 20 minutes. At this point you can walk away and leave it all afternoon, if needed.

  4. Pour the frozen cauli rice into a wide microwave safe bowl (it needs as much surface area as you can give it, don't use a deep mixing bowl). Do not cover or add water. Microwave on high for 6 minutes. It's done and not mushy. You're welcome :-)

    1. updated method - for purists who don't want to use the microwave, you can just dump your frozen cauli into the top of the pot when the initial 20 minutes is up, replace the lid and it will thaw as the rice steams. Your cauli won't get as cooked this way, and will still be slightly crunchy.)

  5. When it's time to eat or reheat, toss your cooked cauli rice with the rice/quinoa blend and serve as rice!

  6. I estimate how much I think I'll need for the week and keep that in the fridge, then freeze the rest in 2.5C portions. That's enough for a breakfast and lunch for me for 1 day, and I can take out 1 or 2 if I need rice for a dinner later on.

  7. I plan to experiment with how LITTLE rice I can get away with in this mix. Maybe 1/4 rice and the rest quinoa/cauli? What can you get your family to eat?
